    Every home in New Zealand, just about, has a jar of manuka honey. Great on toast. Lovely in hot chocolate or ™Milo. If you like honey, I suggest you try both thyme and borage honeys.
    Thyme is a phenomenal honey. Like velvet but in a good way.

    Tenderize the meat first.
    Leave it marinating for 1-3 days.
    Wash it off.
    Dry it off with towels.
    Then dry age it.

    Next time you should play a practical joke on Angel. Make your "control group" a lesser steak dry age it half the time then for your "experiment" dry age some Wagu. Then once he declared the experiment better than the control tell him you dry aged it in seaman. lol I grantee 50 million views.

    Dry aging is controlled rotting. Bone marrow rots much faster than muscle. Limit the thickness to under 2" and cut the time in half. Vacuum seal the meat with honey and the "oxidation" will be self limiting.

    For some just reading lately, manuka honey is super super super expensive and it is very anti-bacterial, you can use it on leg ulcers and dry skin spots on your body and it will help medically too.

    hey guga, I have a recommendation if you decide to try doing the honey dry age experiment again. warm the honey up in the microwave or in a water bath for a short bit, while stirring occasionally. this will make the honey more runny, and easier to spread over the meat. As it cools, it will conform to the steak and will provide better coverage.
